The position will oversee four outlets. La Bella Vita, Stewman’s Lobster, Paddys and Bar Harbor Club. The anticipated food and beverage revenues are in excess of $16,000,000. RESPONSIBILITIES/DUTIES:
- Responsible for the hiring, training, and proficiency of employees in the Food & Beverage Department
- Plan for and schedule manpower, equipment, and supply requirements for the Food and Beverage Department and maintain accountability for the cost, utilization, and performance of employees and equipment
- Be on the floor during entire meal period and ensure adequate coverage.
- Conduct taste panels and menu classes for restaurant.
- Ensure that only a quality product is being served.
- Monitor hours and staffing on a daily basis, for restaurant, with accurate scheduling in line forecast and budget guidelines.
- Proper departmental communication is maintained through Daily Stand-ups, weekly departmental meetings and other communication tools.
- Communicate with all F&B areas regarding upcoming programs and groups, special needs, and any additional assistance that may be needed.
- Implement effective cost controls for labor, beverage, and other operating costs.
- Assist with developing annual budget, maintaining proper monthly/period forecast and justify period end results to Executive Management.
JOB REQUIREMENT:
- 5+ years’ experience as director of Food & Beverage in a hotel or resort environment.
- Experience in a 4 or 5 diamond quality property
- Experience with management of staff at multi-outlet properties strongly desired.
- Working knowledge of budgets and budget process.
- Effective ability to supervise, motivate and mentor team members to maintain optional department operation and staff development.
- Analytical approach to problem solving
- Ability to work, communicate and maintain positive guest and colleague relations
- Strong attention to detail
- Strong computer and spreadsheet skills
- Multi-tasking
- Effective written and verbal communication skills exercising patience, tact and diplomacy.
