Pecan Street Brewing SOUS CHEF JOB DESCRIPTIONPecan Street Brewing (PSB) is a family owned BrewPub located on the historic courthouse square in Johnson City, Texas. We are nestled in the heart of the Texas Hill Country 1 block north of Hwy 290/Main St – more commonly known as “The Beverage Trail”. We offer Texas Size Hospitality at our BrewPub with a full restaurant/bar and brewery serving our local community and touring guests. PSB opened in June of 2011 and has enjoyed consistent growth each year. PSB currently has a 7BBL brew system with 2 fermenter tanks. We average 8 to 10 beers on taps and have a library of 50 to 80 recipes. All beer is sold in pints, growlers and crowlers at the brewpub (we do not distribute at this time). We are looking to expand the brewing system to keep pace with demand. We are looking for A SOUS CHEF who shares our dedication, work ethic, and passion for hospitality. Someone who thrives in a hands-on, fast pace kitchen.POSITION SUMMARYOur Sous Chefs (Culinary Managers/Kitchen Managers) are responsible for the daily operations of the kitchen, by providing professional leadership and direction to the culinary team by ensuring that all recipes, food preparations and presentations meet the restaurant’s specifications and commitment to quality. This is an excellent opportunity if you: pride yourself on being a hands-on leader passionate about food and hospitality accustomed to executing perfectly, attending to details & aiming for excellence welcome the challenge to continually improve and growRESPONSIBILITIES· Assisting in menu development· Managing Food & Sanitation standards · Managing Product Rotation· Conducting monthly inventories along with Chef· Organizing and determining the needs for daily prep· Managing and training Line Cooks I-III on Grill, Saute & Fry· Conducting & Managing HOH team alongside Chef· Overseeing preventative maintenance to the kitchenREQUIRED SKILLS & EXPERIENCE· High school diploma or GED, required· 2-3 years of prior kitchen management experience (Kitchen Manager, Culinary Manager Sous Chef), required· Culinary degree or certificate, preferred· ServSafe Sanitation certification, preferred· Experience in a polished casual or fine dining restaurant, preferred· Positive Team Attitude – ability to hold self & the team together in ‘the heat of battle’COMPENSATION & BENEFITSThis is a full-time salary position.
