Qualifications
· Proven superior culinary skills
· 2 to 3 years’ experience in a kitchen management role

· Ability to lift medium amounts of weight (30 lbs) and in good physical condition
Responsibilities
· Plan menus to meet customer needs & tastes with an emphasis on high quality seafood.
· Work within an experienced management team along with the Owner, General Manager and Operations Manager receiving the necessary support and resources to succeed.
· Supervise and coordinate all daily culinary schedules and goals
· Insure Food and Cleanliness standards
· Direct input into hiring and training of kitchen staff
· Directly responsible for prepping & cooking appetizers and dinner for 65-75 guests nightly,
· Managing and delegating to a kitchen staff that is responsible for breakfast & basic boxed lunches preparation
· Successful candidate will work and communicate well with others, possess excellent culinary skills, be hard-working and adaptable
· Extensive experience with steaks and fresh seafood preparation
· Shift is midday thru late evening with 8-10 hour days and 50-60 hour weeks along with 1 day off a week

Are you yearning for an opportunity to be Head Chef’s at an established and thriving Alaska Fishing Lodge? Kingfisher Charters & Lodge is seeking a chef with managerial experience to oversee a seafood focused cuisine and kitchen staff from May thru September 16, 2022. Our first-class Lodge is located on a bluff overlooking the ocean in the beautiful Southeast Alaska town of Sitka. Kingfisher Charters & Lodge has been offering premier fishing vacations since 1990 with an unrivaled reputation in Alaska.
The Head Chef is responsible for all aspects of a kitchen that serves 65-75 customers breakfast, basic box lunches for on the boats along with appetizers and dinner. Our Lodge features a beautiful dining room with stunning views of Sitka Sound and the surrounding mountains while offering Lodge guests only (not open to the public) a gourmet focused menu that features a steak and a local seafood entrée nightly.
With thirty plus years of established excellence and a supportive management team made up of a hands-on Owner along with a General manager and Operations Manager each with over 20 years’ experience at their positions, there will be ample support and resources to uphold a high standard and ensure success. The Head Chef will work with the General Manager in hiring and training the kitchen staff along with inventory and ordering.
The Head Chef will provide schedule and daily goals to a kitchen staff of 5-7. Included are a breakfast chef (4am-noon shift), and 2-3 line cooks (noon-9pm shift). A typical day for the Head Chef is from noon-10pm. All Kitchen staff work 6 day work weeks averaging 50-60 per week while open for a 17 week season mid-May through mid-September.

The job requires an employee to be here from the beginning of May thru September 16, 2022 with our Lodge open for customers for 4 of those 4 ½ months. We offer competitive salary with weekly tips ($7,000 to $8,500 per month) along with an end of season bonus. Lastly, we offer tenured employees a company funded IRA plan and returning bonus for continued employment.
