Executive Chef – Banquets

OVERVIEW

We are currently seeking a hands-on Executive Chef to oversee, lead and motivate our Back of House team within the SentryWorld Events Department. In this role, you will partner with the Event Manager to deliver on and exceed guest expectations for special events as we continue to grow to be a destination venue in the Midwest.  

WHAT YOU’LL DO

As our team’s Executive Chef, you’ll be responsible for delivering on administrative and strategic operations for the department, as well as driving the culinary creation and development of our award-winning event menu. In addition, you’ll:

  • Collaborate with Events Manager and other Sentry Services departments to help ensure success of all events and maximize operational opportunities. 
  • Oversee the planning, set-up and execution of all events to ensure food and operation service standards are executed with world-class quality.
  • Research, design, implement, and prepare creative options for annual, seasonal and custom menus based on upcoming trends and guest requests.
  • Maintain food inventory and supply control, including maintaining storage and rotation of items with forecasted business in mind.
  • Oversee staffing levels, labor costs, team training, development and performance reviews ensuring all team members adhere to department policies and procedures.
  • Assist in vendor recommendations/selection and maintain effective vendor relationships and in order to source quality products at appropriate costs.
  • Prepare and update culinary operation manuals
  • Ensure all equipment is functioning properly and relevant equipment maintenance is scheduled as needed.

WHAT IT TAKES

 

  • Culinary Degree from an accredited school or equivalent work experience
  • 5+ years of related work experience with event and catering experience strongly preferred
  • Ability to obtain WI Food Handlers License and other required certifications.
  • Creative, service-oriented, and self-motivated
  • Proficient knowledge of human resources management and the ability to effectively train and coach
  • Excellent communication and organizational skills
  • Ability to work effectively under time constraints and meet deadlines
  • Must possess a valid driver license
  • Work extended/non-standard hours including nights, weekends and holidays as needed
