Coordinates with the managerial team on activities to ensure operational continuity and service standards.
Ensures food production compliance with all applicable regulatory agencies, department quality monitors and targets and corporate and departmental policies and procedures.

Exemplifies the Rush mission, vision, and values, and acts in accordance with Rush policies and procedures.Principal ResponsibilitiesDevelops and implements menus, recipes and service concepts for assigned units.Manages all food production for unit.Establishes implements and maintains department service standards for quality products and food safety.Maintains and utilizes computerized systems to manage production data.Develops, implements, and analyzes appropriate inventory tracking, quality control measures and quality initiatives.Manages production supervisor(s)/cooks/ingredient control.
This includes hiring, training, counseling, performance appraisals and disciplinary action.Department liaison for preventative maintenance, pest control, and equipment repair in the unit.Monitors department procurement activities to ensure efficient utilization of resources.Meets customer and corporate foodservice related satisfaction standards.Meets budget targets through menu and recipe development.Develops, implements, analyzes appropriate quality control, (i.E.
food quality and temperature) measures for food production.Ensures compliance with all regulatory agency standards and all departmental and organizational policies and procedures.Ensures compliance with all departmental requirements for in-service training, employee orientation and training, timely completion of performance appraisals, and timely submission of department reports.Collaborates with managerial team in the department to ensure that department goals are accomplishedManages department projects as assignedAttends and contributes to departmental meetings.Precepts dietetic interns during management rotation.Implements programs and services that support the Mission, Vision, and Values of the medical center.Position Qualifications IncludeKnowledge, Skills, and AbilitiesDegree in Culinary Arts with training in Food Systems management or Hospitality Management or equivalent experienceIllinois Department of Public Health and City of Chicago Sanitation Certification required within nine months of hireFood Allergen CertificationCompetent in preparation of spreadsheets, data bases, word processingMinimum of five years experience in senior management of a complex food service facilityProven financial responsibilityProven ability to manage financial targets of revenue and expensesSelf-directedStrong interpersonal skillsOrganizational skillsProblem identification and solving,CreativeManage stress effectively.Ability to exert 25 pounds of effort to push or pull a cartAbility to lift and carry 40 pounds minimum, stooping, kneeling, reaching,Sufficient dexterity to operate kitchen utensils and computer keyboard,Able to communicate using a variety of audio-technologyAble to see50% of time sitting, 50% of time standing or walking.The above is intended to describe the general content of and requirements for the performance of this job.
